Mashed broad beans
INGREDIENTS
¼ kg of dry broad beans
2 Katahdin potato
1 spoon of BATAN yellow pepper
2 spoons of ground garlic
1 medium onion
½ cup of vegetal oil
BATAN ground cumin
BATAN black pepper BATAN
Ground oregano BATAN
Salt
PREPARATION
Soak dry broad beans one day before, then boil and reserve.
In a pot on medium heat add vegetal oil, cut onion in cubes, yellow pepper BATAN and garlic.
Then add dry broad beans previously soak, Katahdin potato in small cubes, some salt, and water. Let it boil.
Finally serve the ajiaco de habas (Mashed broad beans) fried egg and rice. Sprinkle some BATAN ground oregano.
